Chilli con Carne

Serves 2

Ingredients

  • 1 tablespoon Oil
  • 1 Onion
  • ~500g Beef mince
  • 1 teaspoon Chilli powder
  • 1 tin Chopped tomatoes
  • 125ml Vegetable stock
  • 1/2 tablespoon Worcestershire sauce
  • 1 tablespoon Tomato puree
  • 1 tin Kidney beans
  • 150g Rice

Method

  • Heat the oil in a pan
  • Fry the onion and mince until the onion is soft
  • Add chilli powder and fry for a further minute
  • Add tomatoes, stock, Worcestershire sauce, tomato puree, and kidney beans, and mix well
  • Bring to the boil, cover and simmer for 20 minutes
  • Serve with rice

Note, can be frozen after cooking.
