Ingredients
- Bag of Spinach
- Couple of large potatoes, cubed
- 1 Onion, chopped
- 2 tsp mustard seeds
- 2 cloves of garlic crushed or finely chopped
- 1/2 tsp ground cumin
- 2 green chillis, chopped
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp asafoetida
- 1/4 tsp garam masala
- knob of butter
- 2 tbsp water
Method
Melt the butter over a medium heat and add the mustard seeds and asafoetida. As soon as the mustard seeds start to pop, turn the heat down, and add the chillis, onion and garlic. Fry for 2 minutes. Add the cumin, coriander, turmeric and garam masala. Add the potatos and fry for a minute. Add the water and the spinach, wilt down and then simmer covered for 20 minutes or until the potatoes are tender.
